As a result of going vegan…I have lost 80 pounds and have more energy than I have ever had in my entire life. I feel vital, healthy and strong.

This is for dinner for the week - Oyster (mushroom) and corn chowder. Oyster mushrooms, organic yellow onion, organic red potatoes, organic carrots, snow peas, green beans, yellow squash, sweet corn cut off the cob, gluten free corn pasta, in organic tomato and organic vegetable broth. Kelp and dulse seaweeds as well old bay seasoning were used for the seafood/chowder flavor.

Overcooked vegetables make me very sad. Raw is the best, but this is a decent guide for cooked. I don’t recommend regularly cooking in the microwave though, as it destroys nutrients even more than other methods.
